Here's whats for lunch

Warm and gooey quesadillas is the perfect lunch. I take a whole wheat quesadilla and stuff it with salsa, re fried beans, cheddar and monterey jackcheese. I lightly pan fry it until the cheese melts and the ingredients are heated through. Today is all about new versions of grilled cheese for me. This is my Mexican twist on the American classic try out this recipe and feel free to add a few of your own favorite ingredients. Enjoy!






Ingredients:

1 whole wheat tortilla
2 tablespoons re fried beans
2 tablespoons of your favorite salsa
1/4 cup cheddar cheese shredded
3 tablespoons monterey jack cheese shredded

Preparation:
Preheat a medium sized skillet on medium heat. Spread bean mixture on the whole wheat tortilla, top with the salsa and spread over bean mixture. Add both cheeses and fold in half. Place quesadilla in preheated pan. Cook on each side for 2-3 minutes or until cheese melts.
