Here's whats for lunch

Here is an all time easy and classic dish to make. The pita pizza is a nice stretch from the regular greasy slice of pizza. Pita Pizza is easy to make on your own and is much healthier. I like to make mine a little fancy but just like any regular pizza you can create your own toppings and make it just the way you want. It can be as simple as a regular cheese and tomato pizza or as fancy as sliced pears and brie. I like my pizza a little tangy in order to even out the sweetness of the pita bread. I top my pizza with olive oil, Parmesan cheese,oregano, thyme, salt and pepper. I bake it in the oven at 350 degrees for 5 minutes until it is golden brown. The olive oil cheese and herb mixture bakes into the bread and turns it into my own version of focaccia bread. I top my pizza with caramelized onions, goat cheese, and fresh parsley. The ingredients are simple but the outcome is unbelievably delicious. Try to invent your own version of a pita pizza and I guarantee you will be pleasantly surprised.

Goat Cheese and Caramelized onion pizza.
Ingredients:
1 round of pita bread
2 tablespoons of olive oil
2tablespoons grated Parmesan cheese
1 teaspoon of dried oregano
1 teaspoon of dried thyme
1/4 cup of crumbled goat cheese
1 medium onion cut into slices
1 teaspoon granulated sugar
pinch of crushed red pepper (optional)
salt and pepper
1 tablespoon fresh parsley

Preparation:
take the pita bread and drizzle the top with olive oil. Sprinkle on a little bit of salt and pepper, oregano, and thyme. Bake in an oven or toaster oven for 5 minutes until golden brown then set bread aside. Heat a small pan on medium heat. Add 1 tablespoon of olive oil then add sliced onions into pan. Let the onions cook on medium heat for 10 minutes, add the sugar to the onion mixture and cook for another 3-4 minutes. Sprinkle salt and pepper onto the onions and mix together. Take the baked pita round and top with the crumbled goat cheese, add caramelized onions on top of the goat cheese then sprinkle the fresh parsley on top of the whole pizza. Cut into wedges and enjoy!
