Here's whats for lunch


Mini spinach puffs and a fresh cucumber salad will have you dreaming of summer. This meal is so light and refreshing but truly delicious. Small pieces of puff pastry stuffed with a spinach and feta cheese mixture will just melt in your mouth. Cucumber salad with fresh mint and a lemon vinaigrette will give a nice balance to the richness of the puff pastry. It is a healthy and refreshing meal that will get you through your day. Enjoy!



Ingredients:
1 sheet of puff pastry cut into squares
1 package of frozen spinach thawed
1/2 cup feta cheese
1 cucumber sliced thin
1/4 cup olive oil
juice of 1 lemon
2 tablespoons of chopped fresh mint
salt and pepper

Preparation:

Spinach puffs
combine the spinach and feta cheese. Sprinkle in a little pepper. Put 1 teaspoon of the spinach mixture into the middle of a puff pastry square. Fold the square into a triangle and pinch the ends closed with a fork. Bake for 15 minutes in a 350 degree oven until golden brown.

Cucumber Salad
whisk together olive oil, lemon juice, salt and pepper in a medium sized bowl. Add sliced cucumbers to the Lemon vinaigrette and toss together. Add sliced mint and toss again. (be sure not to put the mint in the lemon vinaigrette it will turn brown and get bitter.)
