Warm and gooey quesadillas is the perfect lunch. I take a whole wheat quesadilla and stuff it with salsa, re fried beans, cheddar and monterey jackcheese. I lightly pan fry it until the cheese melts and the ingredients are heated through. Today is all about new versions of grilled cheese for me. This is my Mexican twist on the American classic try out this recipe and feel free to add a few of your own favorite ingredients. Enjoy!
Ingredients: 1 whole wheat tortilla 2 tablespoons re fried beans 2 tablespoons of your favorite salsa 1/4 cup cheddar cheese shredded 3 tablespoons monterey jack cheese shredded
Preparation: Preheat a medium sized skillet on medium heat. Spread bean mixture on the whole wheat tortilla, top with the salsa and spread over bean mixture. Add both cheeses and fold in half. Place quesadilla in preheated pan. Cook on each side for 2-3 minutes or until cheese melts.

There are many variations for a grilled cheese sandwich but my favorite is the all American classic version. When you want something fast and quick an egg sandwich is the perfect thing to throw together. I know most of you are probably thinking why should I eat eggs for lunch? When you think about eggs are truly the perfect food, they are full of protein, not to heavy, and can be flavored up in thousands of ways. My version of an egg sandwich is quick and delicious, I add cheese and ham to my egg sandwich and put it between a nice toasty English muffin. There are many ways to make this sandwich more gourmet, for instance, you could add pesto to your eggs and put it between toasty ciabatta bread with tomatoes and Arugula, however you decide to make your egg sandwich I guarantee it will become your new simple and delicious go to meal. Ingredients: 1 egg 1 slice American or cheddar cheese 2 slices of your favorite ham 1 tablespoon of mild salt and pepper 1 teaspoon of butter 1 English muffin split and toasted

Pour the egg mixture into the pan until the egg starts to firm up, flip the egg mixture over so the other side will slowly cook. Add cheese slices on top of egg and heat until the cheese melts. I like to mix the yogurt with raisins because I enjoy the texture it brings to the yogurt, but try this out with some of your favorite ingredients and enjoy!
