Here's whats for lunch

Pasta with Fresh mozzarella and cherry tomatoes is a delicious and healthy lunch. Pasta can be very heavy and very filling but this dish is very light and can be enjoyed warm or cold. I use penne pasta and mix it with chunks of fresh mozzarella, cherry tomatoes, and fresh basil. I toss the whole dish with a little bit of garlic infused extra virgin olive oil, lemon juice, salt and pepper. It is my quick and easy version of warm pasta salad. Try this recipe out and enjoy!

Ingredients:

1/2 a box penne rigate
1/2 container cherry tomatoes rinsed and cut in half
1/2 a ball fresh mozzarella cut into cubes
1/4 cup olive oil
1 clove of garlic whole
juice of 1 lemon
salt and pepper
5 basil leaves torn apart into small pieces

Preparation:
Cook pasta according to package directions. Heat up the olive oil with the clove of garlic until it is warm. (be careful not to burn the garlic). Drain pasta and add into a large bowl, add split tomatoes. Whisk olive oil, lemon juice, salt and pepper into a small bowl then pour over warm pasta. Combine all ingredients together then add in basil leaves. Toss once again and enjoy!

Here's whats for lunch

When it is cold and rainy out I want to eat something warm and comforting. Chicken Parmesan Sandwiches are a very comforting food. They are filled with gooey mozzarella cheese, tangy tomato sauce, and fried chicken, whats not to like. The only problem is after eating one of these sandwiches you feel like going to sleep for hours. It ways you down and leaves you lethargic, but I have a little twist on the classic favorite that won't way you down. My version of the traditional Chicken Parmesan Sandwich gets a fresh twist. Italian bread stuffed with grilled chicken, tomato sauce, fresh mozzarella cheese, red onions, and basil is a perfect twist on the Italian classic. It is a filling yet satisfying meal that won't way you down. It is easy to make and will leave you satisfied but not to stuffed. Enjoy!

Ingredients:
1/4 of an Italian loaf split in half
1 chicken breast
1/4 of a red onion sliced thin
1/4 cup of tomato sauce
1/2 a tomato sliced thin
4 slices of fresh mozzarella cheese
5 basil leaves chopped
3 tablespoons olive oil
salt and pepper

Preparation:

put a little bit of olive oil on the chicken breasts and sprinkle with salt and pepper. Grill until fully cooked through, or bake in the oven at 375 degrees for 10 minutes or until cooked through. After chicken is cooked set aside. Take the Italian bread and brush with olive oil then sprinkle with salt and pepper. Spoon the tomato sauce onto the bread and spread evenly. Put the sliced tomato in an even layer on one side of the bread. Add the onions, mozzarella cheese, and basil leaves in an even layer on top of the tomatoes. Slice the chicken breast into thin strips and add on top of the basil leaves. Brush the outside of the bread with a little bit of olive oil then place into the 375 degree oven just until the sauce heats up and the cheese melts.

Here's whats for lunch

I create my own version of the Italian appetizer bruschetta. Mix the tomatoes, onions, goat cheese, olive oil, basil, and mozzarella cheese, salt, and pepper together in a bowl. Cut the French bread in half and hollow out the bread with a spoon. Take the tomato mixture and spread it evenly into the middle of the bread. Bake at 350 degrees for 10 minutes and enjoy! This will become your new favorite version of bruschetta. Heating up the ingredients helps the goat cheese and mozzarella cheese melt together and surround the tomato mixture. It is so creamy and unbelievably delicious!

Ingredients:

1 tomato
1/4 of an onion
2 teaspoons of goat cheese
1/4 cup of mozzarella cheese
4-5 leaves of basil
3 tablespoons of olive oil
1 teaspoon crushed red pepper (optional)
1 loaf French or Italian bread
salt and pepper to taste
