Here's whats for lunch


Mini spinach puffs and a fresh cucumber salad will have you dreaming of summer. This meal is so light and refreshing but truly delicious. Small pieces of puff pastry stuffed with a spinach and feta cheese mixture will just melt in your mouth. Cucumber salad with fresh mint and a lemon vinaigrette will give a nice balance to the richness of the puff pastry. It is a healthy and refreshing meal that will get you through your day. Enjoy!



Ingredients:
1 sheet of puff pastry cut into squares
1 package of frozen spinach thawed
1/2 cup feta cheese
1 cucumber sliced thin
1/4 cup olive oil
juice of 1 lemon
2 tablespoons of chopped fresh mint
salt and pepper

Preparation:

Spinach puffs
combine the spinach and feta cheese. Sprinkle in a little pepper. Put 1 teaspoon of the spinach mixture into the middle of a puff pastry square. Fold the square into a triangle and pinch the ends closed with a fork. Bake for 15 minutes in a 350 degree oven until golden brown.

Cucumber Salad
whisk together olive oil, lemon juice, salt and pepper in a medium sized bowl. Add sliced cucumbers to the Lemon vinaigrette and toss together. Add sliced mint and toss again. (be sure not to put the mint in the lemon vinaigrette it will turn brown and get bitter.)

Recipe of the day

Today's recipe is all about the flavors of Greek cuisine. Spanakopizza is a healthy twist on the traditional GreekSpanokopita. Spanakopita is a delicious pie that is made with phyllo dough, spinach, and a lot of feta cheese, but it tends to be very heavy. This meal is a healthier version of the traditional spinach pie. This "Greek Pizza" is topped with grilled chicken breast, garlic, onions, feta and mozzarella cheese. The entire pizza is topped with a traditional Greek salad. Romaine hearts, spicy arugula, kalamata olives, hot pepper rings, cucumbers, and more feta cheese are combined to top of this deliciously healthy pizza. It is a meal that can be eaten for lunch, dinner, or a later night snack. It is not too heavy and will have you energized and satisfied for the rest of the day. Take a taste of Greece and all of delicious and fresh ingredients it has to offer. Enjoy!!!
